Easy cheesy chicken casserole


Ingredients
  • 1 pound boneless, skinless chicken breast
  • 1 1/2 cups rice
  • 2 cans cream of chicken (or cream of broccoli, celery, etc)
  • 1 bag frozen broccoli
  • 1 1/2 cups sharp cheddar cheese

Directions
  • Preheat oven to 350 degrees
  • Place rice into casserole dish
  • Top with cream of chicken soup. Add 1/2 a can of water and mix.
  • Mix frozen broccoli with rice mixture
  • Top with chicken is single layer
  • Place in oven for 40 minutes
  • After 40 minutes, top with layer of cheese. Cook for an additional 5 minutes
I use broccoli, however, this is also good with mixed vegetables, or any of your favorites.

To mix it up, change the cheese to a taco blend and add 1/4 tsp. taco seasoning or a pizza blend cheese and a 1/4 teaspoon of Italian seasoning.

This is a great recipe because it takes less than 5 minutes to prep. And, while it does take almost an hour to cook, it is all time the casserole is spent in the oven.

I made this last night after coming home from the zoo - we were exhausted - but this was easy and I didn't have to do much cooking (and it still tasted good).

It also makes delicious leftovers and reheats well in a microwave (perfect to take with for a lunch at work).
